Great way to start your day. I made these for Mother’s Day breakfast. I layered the granola with yoghurt, berries and raspberry coulis. The granola recipe is originally from Wholefood Simply, I have converted it for the Thermomix and changed it slightly to make it my own.
What You Need
45g pepita seeds
60g sunflower seeds
75g desiccated coconut
100g medjool dates, seeds removed
50g dried apricots
1 teaspoon concentrated natural vanilla extract
1 teaspoon cinnamon
2 heaped tablespoons coconut oil
20g goji berries
What To Do
Preheat your oven to 180°C & line a large tray with baking paper.
Place all ingredients except for the goji berries into your TM bowl in the order listed above. Turbo 3-5 sec until the mixture is chopped to your liking.
Spread the mixture evenly over your tray and bake for 12 – 15 minutes. Stir the mixture and bake for a further 5 – 7 minutes.
Remove from the oven and allow to cool. Sprinkle over the goji berries. .
