A quick and easy tart I adapted from my Vegetable & Feta Tart recipe.
What You Need
1 qty short crust pastry (from everyday cookbook) or shop bought short crust pastry
1 zucchini cut into ribbons
1 spring onion thinly sliced
100g Danish feta
1 tablespoon chives
100g full cream milk
100g pouring cream
Pinch of salt
What To Do
1. Pre-heat oven to 180C. Grease a 23cm pie tin.
2. Line prepared tin with pastry and blind bake till golden brown. Place zucchini, spring onion and crumble feta over cooked pastry.
3. Place milk, cream, eggs, chives and salt into a clean TM bowl and mix for 10sec Speed 3.
4. Carefully pour over zucchini and feta base and bake for 40-50mins or until just set.
