Triple Choc Muffin Recipe - The Creative Mummy

Thermomix Recipe

What You Need

 

90g Butter

110g soft brown sugar

230g SR flour

70g plain flour

30g cocoa powder

2 eggs

380g butter milk

130g white chocolate chips

130g dark chocolate chips.

What To Do

Preheat oven to 180C.

Grease muffin trays (I used mini muffin trays however you can use any size you like)

Melt butter on 90C Speed 1 for 2 mins.

Place all other ingredients into TM bowl combine on reverse speed 4 for 10sec.

Scrap down sides of bowl and mix on reverse speed 4 for 5sec.

Spoon mixture into muffin trays, filling each one about 3/4 full.

Bake in oven for 15-30mins depending on the size of your muffin tray.

Conventional Recipe

What You Need

 

90g Butter (melted)

110g soft brown sugar

230g SR flour

70g plain flour

30g cocoa powder

2 eggs

380mls butter milk

130g white chocolate chips

130g dark chocolate chips.

What To Do

Preheat oven to 180C.

Grease muffin trays (I used mini muffin trays however you can use any size you like)

Sift cocoa powder and flours into a large mixing bowl.

Stir in sugar and chocolate chips, make a well in the centre.

Whisk the eggs and butter milk together in a jug and pour into well of the dry ingredients, along with the butter.

Stir until just combined, do not over mix!

Spoon mixture into muffin trays, filling each one about 3/4 full.

Bake in oven for 15-30mins depending on the size of your muffin tray.
