Chilli Jam Thermomix Recipe

Here is a recipe of one of my yummy condiments I love to make. I use it in stir-fries, marinades, sauces and in sandwiches. I have changed the original recipe slightly to make it slightly milder. But if you like it hot just add more chilli’s. I make mine in my Thermomix (Of course!) below I have both the conventional recipe and a Thermomix converted recipe.

Chilli Jam Recipe - The Creative Mummy

Chilli Jam
 Ingredients

1kg  ripe roma tomatoes, chopped coarsely
2 1/4 cups (500g) caster (superfine) sugar
1/3 cup (75g) white vinegar
1/4 cup (50g) lemon juice
4 fresh long red chillies, sliced thinly
1 fresh small red thai (serrano) chillies, sliced thinly
4cm (11/2-inch) piece fresh ginger (20g), grated
3 cloves garlic, crushed
2 tablespoons fish sauce
1 teaspoon coarse cooking salt (kosher salt)

Method

1. Stir ingredients in large saucepan over high heat, without boiling, until sugar dissolves. Bring to the boil. Reduce heat; simmer, uncovered, stirring occasionally, about 4 hours or until jam is thick. Cool 15 minutes.
2. Blend or process chilli mixture, in batches, until smooth. Pour into hot sterilised jars; seal immediately. Label and date jars when cold.

Chilli Jam Thermomix Recipe

Ingredients

1kg  ripe roma tomatoes

500g sugar

75g white vinegar

50g lemon juice

4 fresh long red chillies

1 fresh small red thai (serrano) chillies

20g piece fresh ginger

3 cloves garlic

2 tablespoons fish sauce

1 teaspoon coarse cooking salt (kosher salt)

Method

1. Place all ingredients in bowl and chop in speed 6-7 for 30sec.

2. Cook on 100c Speed 1-2 for 60 mins with MC off. Place basket on top of lid to prevent splattering. (Depending on the water content of your tomatoes the temp may need to be reduced to 90c to avoid overflowing) 

3. Continue to cook on Veroma Speed 1-2 for another 20 mins or until jam is thick. Cool 15 minutes.

4. Pour into hot sterilised jars; seal immediately. Label and date jars when cold.

Tips:

Store in a cool, dark place for up to three months. Refrigerate after opening.

Wear plastic disposable gloves when cutting chillies as they can burn your skin.
