Love is in the air!

Here are some simple and easy cupcakes with a Valentine’s Day twist!

Once again I have provided two recipes a normal one and a Thermomix recipe.

As for the twist all I did was add a teaspoon of red food colouring to the batter mixture.

Once they had been baked and cooled down I added the icing sugar heart!

I simply folded a small piece of paper in half and cut half a heart shape.

I opened the piece of paper and placed it onto the centre of the cupcake.

I then used a tea strainer and one tablespoon of icing sugar and sifted the icing sugar over the heart template.

I carefully removed the template. All done!

Vanilla Butter Cakes

Recipe from Women’s Weekly Easy Cupcakes By Colour

Makes 8

1 cup (150g) self raising flour

90g softened butter

1 teaspoon vanilla extract

½  cup (110g) caster sugar

2 eggs

2 tablespoons milk

  1. Preheat oven to 180/160 degrees. Line 8 holes of muffin pan with paper cases.
  2. Sift flour in to a bowl, add butter, extract, sugar, eggs and milk; beat with electric mixer on low speed until ingredients are combined. Increase speed until mixture is smooth and changed into a paler colour.
  3. Drop ¼ cup of mixture into case. Bake for about 20 mins. Stand cakes for 5 mins before turning topside up onto wire rake to cool.

Thermomix Vanilla Cupcakes

What You Need

200 g unsalted butter (softened at room temperature)

200 g caster sugar

200 g Self Raising Flour

4  medium eggs

1 teaspoon vanilla extract

What To Do

1.

Preheat oven to 180 degrees C and line patty pans with cupcake cases (or line 8″ baking tin).

2. Place butter and sugar into TM bowl and mix for 30 seconds on Speed 5.

3. Add eggs one at a time (at 10 second intervals) to ensure that each egg has been incorporated.

4. Put in Butterfly – add vanilla and then flour one tablespoon at a time (through hole in the lid) every 5 seconds until all flour is mixed in and batter is thick and fluffy.

5. Spoon cake mixture into cupcake cases (fill cases only 3/4 full).  Bake at 180 degrees C for 12-15 minutes.

Note: Makes 30 (patty pan sized) cupcakes or one 8″ cake.  For 8″ cake – test centre of cake with skewer – cake  is ready if skewer is clean on removal.
