Lately I feel like I have been cooking the same meals week in week out. So last week I tried this recipe that my mum use to make for us as kids.
As I didn’t follow a recipe these are approx measurements but it really depends on how many potatoes you are using.
3/4 cup frozen peas
3/4 cup canned corn
1 cup cheddar cheese grated
2 spring onions chopped
3 rashers of bacon diced
Prick each potato with a fork. Place evenly around edge of microwave turntable. Cook on High, turning once, for 8-10 minutes or until tender. Transfer to a bowl. Cover with plastic wrap. Set aside to cool slightly.
Meanwhile, Fry onion and bacon till they are lightly brown. Add peas and corn and fry for a few more mins.
Cut the top of each potato and using a teaspoon scoop the potato out into a large bowl, careful not to go through the skin.
Mash the potato and stir through 3/4 cup of cheese and the rest of the ingredients. Scoop this mixture back into the potato cases add the left over cheese to the top and place in the oven for 10 -15 min or until cheese as melted.
You can also serve this with your favourite condiments. I’ve used sour cream.
