One of my favourites slices to make. It is easy to make and very delicious.
PINEAPPLE COCONUT SLICE
Recipe from Women’s Weekly Easy Baking
- 185g butter, softened
- 3/4 cup castor sugar
- 3 eggs
- 2/3 cup desiccated coconut
- 1 3/4 cups self-raising flour
- 270ml can coconut cream
- 440g can crushed pineapple, well drained
- 1/3 cup shredded coconut
- Lime icing:
- 1 1/2 cups icing sugar
- 20g butter melted
- 2 tbs lime juice
Pre-heat oven to 180C, or 160C fan forced. Grease a 22cm x 32cm rectangular cake pan, line with baking paper, extending paper 5cm over the long sides.
Beat butter and sugar in a small bowl with an electric mixer until light and fluffy.
Beat eggs one at a time. Transfer mixture to a large bowl; stir in the coconut, sifted flour, coconut cream and pineapple in two batches. Spread mixture into pan.
Bake cake for 45 minutes.
Stand the cake in the pan for 10 minutes before turning on to a wire rack.
Icing: Sift icing sugar into a heatproof bowl, stir in the butter and juice to make a paste. Stir over a saucepan of simmering water until spreadable.
