Weekend Lunches – Tuna & Vegie Fritters

By the weekend my kids are sick of sandwiches so I like to make them something yummy and nutritious for lunch. Or if I need something quick and easy for dinner this is one of my favourites. If I have any leftovers, they are perfect for lunch boxes too.

Tuna & Vegie Fritters

6 eggs

2 spring onions chopped

1 large can of tuna (drained)

1 cup of frozen veggies. (diced type)

1 can of baked beans

3/4 cup of grated cheese

Oil spray

  1. Mix all ingredients together in a large bowl.
  2. Heat a large non-stick frying pan or pikelet pan over medium heat. Spray with oil spray. Using a tablespoon, spoon the mixture into the pan. Cook for 2 minutes. Carefully turn them over and cook for a further 1-2 minutes or until cooked through. Transfer them to a plate and repeat with the remaining mixture.  You may need to lightly grease the pan in between each batch.
  3. Serve with your favourite condiment.
